Abstract

Strategies for an integrated food safety have to focus on the entire
food chain. The anatomical-pathological findings, recorded as routine
meat inspections at the abattoir, allow conclusions in relation to the
herd’s health status. However, farmers often question the exactness and
repeatability of such findings. The inspections of 20 carcasses and 20
organs by 11 meat inspectors have been analysed in order to proof the
repeatability of anatomical-pathological findings. The accordance of the
results has been calculated by making use of Kendalls
Konkordanzkoeffizient W.
The results for pleuritis, kidneys and
pericarditis were corresponding to a high degree among the meat
inspectors. In contrast, the assessments of lesions of the skin, lungs
and livers differed notably. In order to improve the quality of the data
and the acceptance of meat inspection as a tool for quality assurance
among farmers it is recommended to continuously analyse the differences
between meat inspectors with regard to their individual diagnostic
patterns.
